Simply Good Banana Bread

Made with simple ingredients, this banana bread always comes out of the oven perfect.

 

Cook time:      40 minutes

 

Ingredients:

3 bananas, mashed fine
1/2 cup shortening
1 cup sugar
1 teaspoon baking soda
1 cup flour
2 eggs
1/2 cup nuts

 

Directions:

Cream bananas, shortening and sugar. Sift soda and flour together and add alternately with eggs to banana mixture. Add nuts. Bake in a greased loaf pan at 350 degrees approximately 40 minutes, until toothpick in center comes out clean.

 I agree that it came out perfectly, but as a matter of personal preference, I found the bread to be overly oily. It tasted great, but when I was done eating, I could rub my lips together like I was putting on lipstick from all the oil residue left behind. I would cut half shortening and half applesauce next time.

    Q. Hope someone can help me. Spring and summer is coming and my family loves Macaroni Salad.The old fashion kind, with pasta shells, celery, onions, hard boiled eggs, salad dressing. When I first make it, it comes out nice and creamy, but after it chills in the refrigerator it firms up to much and is not creamy. Please help me keep it creamy. What can I do?
