Mother's Banana Bread

Source: Church cookbook thats older than me!

 

I make this in a big 10" loaf pan, but you could do 2 smaller ones instead.

 

 

Ingredients:

3/4 cup melted butter (1 1/2 stick)
3 eggs
3 or 4 mashed bananas (about 1 1/2 cup total)
1 1/2 t vanilla
6 T milk
3/4 c sugar
2 1/4 c flour
1 1/2 t baking soda
1/2 t salt

 

Directions:

Heat oven to 350°.

Mix wet ingredients.

Mix dry ingredients.

Mix wet with dry ingredients until just combined. Do not over mix.

Spread batter in large buttered and parchment lined loaf pan. Bake until golden, and toothpick comes out clean, dont know how long (sorry! just check on it)

Finished bread came out great. I was nervous about Denver's altitude, but I held back on the baking soda and added a bit more liquid (Frangelico liqueur).  I also used a blended egg product and was very pleased with the outcome.  Tasted great fresh out of the oven.  Betty Rocky - thank you for a great recipe.

I did not have a loaf pan, but I put the batter in a muffin tin.  Great as muffins!

    Q. Can someone please explain Nutella? I have no desire to try this but I keep hearing about it. It doesn't sound good, but I keep seeing it pop up in recipes.
