Question

In a quagmire now. Just got some ground venison meat (deer meat) and I don't know how to cook it. HELP!!! Also,does anyone have a good venison cookbook? or maybe a cookbook that has other types of meat to cook like buffalo, dear, etc. Also venison recipes will be appreciated. Thank you, Lady

A: Check your local County Extension office. They always have venison recipes they'd love to share!!

A: My husband hunts, so we have lots of venison. When he gets it butchered the meat we have ground is mixed about 3 to 1 with hamburger, Venison (3) hamburger 1. THis helps give it just a bit more fat so it browns up better. IF yours is already ground try a little olive oil & a little water to help it brown a bit easier & break up better. W/ steaks, chops & roast; I like to marinade with spices & vinegar such as red wine or even balsamic, & garlic, green onion, sky's the limit! Tenderizes it

A: I don't like the gamey taste of wild meat and this is the best way I have found to prepare it (after nearly 20 years of experimenting). For 1-1.5# of ground meat, I add 1-2T.+ Dirty Ribs Dirty Grill Rub Steak Seasoning (my fave but use any spice mix you like), 1/2 c.+ italian flavored bread crumbs, 1-2 eggs and 1 T.+ worcestershire sauce. Mix well and form into patties. I grill them until done then I serve sliced smothered in purchased brown gravy. Enjoy :o)

A:  I agree VENISON can be substituted for GR. BEEF in most recipes I cook alot wild meat (I have a family of hunters) and venison is low in fat! Recipe cookbooks.. go to Amazonbooks.com and type in Venison cookbooks...many to choose from, great prices!!! (AS mentioned before,IF you don't like the gamey taste use extra spices and herbs(onion pwd., garlic, etc)OUR favorite recipes are chili, sloppy joes,meatballs,if lucky enough to have steaks,tenderloins(fry or grill quickly to keep meat tender)

A:  You can prepare venison the same way as ground beef. I have noticed that the best way to eat it if you don't like the "gamey taste", is to cook it into a sauce (ie. spaghetti) or cook it into a lasagna. If you want to make it into a meatloaf try adding in some garlic & herb bread crumbs, an egg, and a package of dry onion soup mix. Mix well and mold into your meatloaf. Hope this helps. P.S. you can also sneak it past kids/picky eaters this way.
