peaches and cream kicked up

 

Servings:         8 to 10

Prep time:       10 minutes

Cook time:      12 to 15 minutes

Total time:       25 minutes

 

Ingredients:

2 cups fresh or frozen peaches (thawed), sliced with slices chopped in half
8 oz mascarpone cheese
1 tablespoon all spice
1 tablespoon lemon juice
1 teaspoon nutmeg
1 tablespoon cinnamon
10 egg roll sheets
½ cup peach preserves
1 quart canola oil

 

Directions:

Using a big bowl, add mascarpone cheese, peach preserves, cinnamon, nutmeg, lemon juice and all spice, mix thoroughly. Refrigerate peach mascarpone mixture for 30 minutes. Using egg roll package instructions, spoon about 1½ tablespoons of the mixture onto each egg roll. Roll and form all the egg rolls (DO NOT OVER FILL EGG ROLLS). Fry egg rolls, turning quickly, cooking on all sides to just golden brown, less than a minute. Remove to a rack and repeat until all cooked.

This sounds wonderful-kina a different spin on turnovers. Thanks for sharing! This would be heavenly with White Peaches..they are hard to find around here(even in season), so I will have to wait for that piece of heaven, but I will try this with yellow peaches still @ Walmart. Thanks again!

Yummy,  These will get a try - the peaches are here in Washington.  Thank you for sharing.  Do you have White peaches where ever you are.  They don't have themin Florida.  They are super tasty and juicy!!!!!

Great recipe!! I just bought ingredients, I'll try it tomorrow.

I would guess since it is Canola oil and "less that a minute" of frying you want it to be high heat. From what I know the rule is: Canola, vegetable, grapeseed oils are for high temp cooking... while olive oil is for medium heat (or it burns and tastes nasty).
