Breaded Fried Chicken finished in the oven

 

Servings:         4 to 6

Prep time:       30 to 40 minutes including resting time

Cook time:      30 to 45 minutes depending on number of frying batches

Total time:       1 hour 15 minutes -- not including refrigerator marinating time

 

Ingredients:

2 to 3 pounds chicken pieces (Breasts, legs, thighs and wings).
3 cups buttermilk
Kosher salt & fresh ground black pepper
4 eggs, beaten
3 cups All Purpose flour
4 cups vegetable shortening or lard, for frying

 

Directions:

1. Place all chicken pieces skin side down in a container with a lid and pour in buttermilk to marinate in the refrigerator for at least 6 hours or overnight, if possible'
2. Pre-heat oven to 375 degrees F.
3. Remove chicken from buttermilk and season both sides with salt & pepper.
4. Place beaten eggs and flour in separate shallow bowls. Dredge chicken first in flour, then in egg, and then in flour again. Remove breaded pieces to a cooling rack to allow coating to dry a little and adhere tightly to chicken.(this step is important to keep the breading on the chicken and not have it fall off in the oil).
5. In a 12 inch chicken fryer or deep sided saute pan, melt enough shortening so that it is 2 inches deep and heat until the oil begins to smoke slightly.
6. Fry the chicken for two (2) minutes on each side, until it starts to color a light brown. Do not crowd chicken in frying pan. Cook in several batches if necessary. Transfer to a baking sheet and bake in the pre-heated oven for 15 to 20 minutes or until cooked through and crispy.

OK my review didnt post. Anyway this sounds really good and I am definately going to try this one. I love fried chicken and the crispier the better for me. I have never had anything made with buttermilk so I will have to hold the spoons till I try it because I have no clue what buttermilk tastes like lol. I will rate it after I try it but I am pretty sure it is going to be great. Thanks

Sounds very good. I have never had chicken made this way before but I am definately going to try it. I love fried chicken, and the crispier the better. Thanks.

I have never been able to fry chicken worth a dang, always just end up calling KFC, lol.  Wild to give this recipe a try, I appreciate the exact frying instruction, and thank you for posting!  Smileys

I\ve never heard of chicken bring fried this way, its a must trry for me.  We use buttermilk to make a tangy curry called "Kadhi". Its made with gram flour and gramflour dumplings. I'll post a recipe shortly. Cheryl

As far as I am concerned, this is the ONLY way to fry chicken.  Have to have the buttermilk!!  Great recipe!!

ME AND MY GIRLFRIEND WAS TALKING ABOUT THIS RECIPE THE ANOTHER. I TOLD HER I NEVER FRIED MY CHICKEN WITH BUTTERMILK , SO NOW THIS IS SOMETHING I MUST TRY SOON

Now, this is the way to fry chicken. My grandmother taught me to do it this way. I have tried different ways, but always go back to this.

My mom makes her chicken this very same way. It is wonderful, smells soooooo good while cooking, and the taste the buttermilk gives it is unbelievable!! This is one great recipe

    Q. Someone asked for a non creamy dressing for cucumbers. Here is the one I use for Cucumber and Onions. 3/4 c. sugar (I use splenda) 1/3 c. cidar vinegar (I usually use white vinegar) 2 Tbsp. water 1/2 tsp. salt (I usually leave out) I also usually add a couple dashes of celery seed and dried parsley. Mix all ingredients together and pour over cukes and onions and refridgerate until ready to serve. Sometimes I double the recipe if I have 2 cucumbers in my salad. Also use for Vinegar Slaw.
