Source: I copied this out of a magazine years ago

 

Spanish rice-like dish with a little bit of a Mexican twist - a quick family favorite

 

Servings:         4

Prep time:       10 min

Cook time:      30 min.

Total time:       40 min.

 

Ingredients:

1 lb. hamburger
1/2 c. chopped onion
1 medium green pepper, chopped
1 tbsp. chili powder
1 tsp. dry mustard
Salt & Pepper, to taste
1 can corn, drained
1-15 oz. can tomato sauce
1/2 c. water
1 c. Minute rice
1/2 - 1 c. cheddar cheese, shredded
Sour Cream, optional

 

Directions:

Brown hamburger with onion and green pepper; drain if necessary. Stir in spices, corn, tomato sauce and water. Bring to a boil, cover and cook 10 minutes. Stir in Minute rice. Reduce heat, cover and cook 5 minutes. Sprinkle with cheese and let melt. Serve with sour cream.
