Tangy apple, sharp cheddar cheese and a hint of sage -- great for fall mornings!

 

Servings:         10

Prep time:       10-15 minutes

Cook time:      50-60 minutes

Total time:       75 minutes

 

Ingredients:

1/2 cup unsalted butter
1/2 cup sugar
2 eggs
1 1/2 cups grated, unpeeled Granny Smith apples (or other tart apple)
2/3 cup grated extra sharp cheddar cheese
1/2 cup chopped walnuts
1 tbsp finely chopped fresh sage
2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

 

Directions:

Preheat oven to 350 degrees F.

Cream butter and sugar together, then add eggs and mix well. Stir in apples, cheese, walnuts and sage until just blended. Add to sifted dry ingredients and mix lightly.

Pour into a well-greased loaf pan. Bake at 350 degrees F for 50-60 minutes or until a skewer comes out clean and the edges of the loaf have turned lightly brown.

Makes 1 loaf.

I couldn't wait for Thanksgiving, we had it for last Sunday dinner, and it was delicious!  A texture like cornbread, with a slightly sweet flavor.  I accidentally used regular salted butter, omitted the walnuts, and served it with honey butter.  Although most of us ate it plain.  Absolutely ALL the thumbs-up!!  Thank you for sharing a keeper.
