Servings:         1 (9-inch) pie

Cook time:      30 min.

 

Ingredients:

1 unbaked 9-inch pastry shell
1 1/2 cups sugar
1/3 cup butter or margarine, softened
3 large eggs
1 tablespoon grated lemon rind
1/4 cup fresh lemon juice
1/4 teaspoon salt
1/2 teaspoon lemon extract

 

Directions:

Preparation
Line pastry shell with aluminum foil, and fill with pie weights or dried beans.
Bake at 425° for 7 minutes, and remove weights and foil.

Whisk together sugar and butter until blended. Whisk in eggs and remaining ingredients.
Pour into piecrust.
Bake at 350° for 30 minutes or until set.
Cool on a wire rack.
