Pure Heaven

 

Servings:         4 to 6

Prep time:       5 minutes

Cook time:      8 to 10 minutes

Total time:       20 to 30 minutes depending on number of batches

 

Ingredients:

2 Pounds MISSISSIPPI Catfish fillets (about 1/2 inch thick)
1 tsp. granulated garlic
2 tsp. kosher salt
1 tsp. Fresh ground black pepper
3 cups cornmeal
Peanut oil for frying

 

Directions:

1. Sprinkle salt & garlic over both sides of catfish.
2. Dredge catfish in cornmeal, pressing gently to get meal to adhere. Shake off excess and set aside.
3. Heat the oil in a large deep skillet or dutch oven over medium heat until a little cornmeal sprinkled in oil gives off a lively sizzle.
4. Gently slip the fillets into the oil and fry, turning once until fillets are golden brown on both sides (about 7 to 8 minutes). Do NOT crowd fish in pan.
5. Remove and drain on paper towels, brown bags or a cooling rack turned upside down over paper towels to wick away the grease and allow catfish to stay crispy.
6. Serve with Hush Puppies, Cole Slaw, Raw sliced Sweet Onions and Tabasco sauce.

Yeah, somehow Pennsylvania pond-raised catfish just doesn't sound as tempting, lol.  Wholey's Fish Market in Pgh. is my only hope for MS catfish, I wonder if I could find a Southern Grandma there too to help me fry it!  Thanks for sharing another classic, Skip.
