ricotta gratin potatoes, good for a variation on the traditional recipe!!

Ingredients:

1 tsp butter
2 lbs red potatoes thinly sliced
1 cp ricotta cheese
3/4 cp chopped fresh parsley
salt and pepper to taste
2 pinches ground nutmeg
1 egg
1 cp heavy cream
2 cps shredded gruyere cheese

Directions:

Preheat oven to 350 f. Butter a 9x13 baking dish.
Place potatoes into a large pot of salted water. Bring to a boil and boil for 1-2 minutes. Drain, rinse in cold water to cool, drain again and pat dry.
In a medium bowl, stir together the ricotta cheese, parsley, salt, pepper and nutmeg. In a measuring cup, whisk the egg with a fork then fill the cup with enough cream to make 1 cp. Season with salt, pepper and nutmeg also.
Arrange a layer of slightly over lapping potato slices in the bottom of the buttered baking dish. Dot with 1/3 of the gruyere cheese. Repeat layers 2 more times and end with potatoes on top. Pour eg and cream evenly over the potatoes.
Bake for 35 to 45 minutes in the preheated oven, until the potatoes are tender and the cheese is browned and bubbly. Let rest for 10 minutes to allow sauce to thicken and serve.

    Q. Just joined and, already, love this site! I'm wondering if there is anyone out there who would be interested in a group for singles, like myself. After a lifetime of cooking in large "family" quantities; I found myself really challenged after becoming widowed. I've learned a few tricks about buying, storing, and cooking food for one and would like to hear from others on the subject.
