Servings:         4-6

Prep time:       15

Cook time:      10 hours

Total time:       10 hours 15 minutes

 

Ingredients:

2 chicken breasts
2 tsps coarse sea salt
1 2-inch piece ginger root, peeled
5 medium carrots, diced
1/2 cup sliced onions
1 can coconut milk
1 cup frozen peas
1 Tbls sweet basil
8 oz fettuccini

 

Directions:

Place first five ingredients in crock pot along with two quarts water and cook overnight on low. In the morning remove piece of ginger and discard. Remove chicken breasts, cool and cut into small pieces and return to pot. Add coconut milk, peas and sweet basil. Taste for seasoning add more salt if desired. After 2 more hours add broken fettuccini (1 inch pieces) and cook until done. Serve.

Oh man!  Heaven in a soup pot. I love this. I ate a soup like this in Gainesville, Florida about 10 years ago and have looked for a recipe for it, but never found it. Maybe this is it. Thank you.
