mac & cheese, turned up a notch

 

Servings:         6 to 8

 

Ingredients:

1 pound elbow macaroni
4 tablespoons butter
sea salt
Fresh black pepper
2 cup of sharp cheddar, shredded
1 ½ cup of Monerey Jack, shredded
1 cup of Asiago cheese, shredded
1 cup of Muenster cheese, shredded
¾ cup of heavy cream
Half a stick of cream cheese, sliced
1 cup Parmesan cheese
1 cup mascarpone cheese

 

Directions:

In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in 2 tablespoons of butter. Toss to coat.

Whisk together the cream, salt, pepper, cream cheese and the rest of the butter. Stir into the pasta and add the cheeses. Over low heat continue to stir for 3 minutes or until creamy

Let me ask you, please do not take this the wrong way, Are you sure you followed the recipe correctly? Is there a chance your measurements were off? I will be more than glad to troubleshoot it for you if you like. Just ask.

This sounded so good, but when I made it, it never got creamy. Some of the cheeses even started to seperate, so that there was so much oil I couldn't even serve it.

I died and went to Heven!  This recipe killed me. I love it but can't do it as the

Dr. told me my cholesterol was way too high. Put me on Lipitor but that

caused other problems so I am on my own and really watching my diet.

Thanks for this wonderful Mac & Cheese recipe. Wish I were able to have
