Makes Great Christmas Gifts

Servings:         Depends on Size of Squares

Prep time:       30 minutes

Cook time:      30 minutes

Total time:       1 hour

Ingredients:

1 bag pepper candies, broken
1 lb. chocolate (dark or milk)
1/2 lb. white chocolate

Directions:

Line pans with wax paper. Crease corners.

Crunch peppermints into small bits. (I use a food processor...makes it much easier).

Chop chocolate (dark or milk) and place into a dry microwave bowl. Microwave in 15 second burst, stirring between...total time will vary.

Pour smooth melted chocolate onto wax paper. Use heat proof spatula to spread evenly. You want it to be about 1/4" thick.

Chop white chocolate and prepare same as dark chocolate. When dark chocolate thickens and is still a little tacky then you can add the white chocolate. If the dark chocolate hardens completely before adding the white when you go to cut the two could seperate. (Optional: can add some peppermint extract to melted white chocolate).

As soon as possible sprinkle the bits of peppermint onto the white chocolate and press into the chocolate to ensure they stick. Set aside in a cool, safe place to allow to solidify.

Remove the entire chocolate peppermint bark in its waxed paper from the pan and set it on a cutting board. Gently peel off wax paper; using large thin knife cut into squares of preferable size.

Enjoy! Store in airtight containers.

    Q. I would like to roast my turkey the day before and have it sliced and not have to deal with that clean up when guests are there. I can't find specific directions on how to do this to assure moist turkey when heating the next day. Do you slightly under cook so not to worry about drying out? I would be grateful for input from members who have experience cooking/slicing the bird a day early. Thanks...Grammylou
