Source: My Beautiful sister in law who is from India

Indian Bread goes with plenty of Indian dishes and good just by itself

Servings:         12

Prep time:       30 plus 4 hours rising time

Cook time:      30 min

Total time:       5 hours

Ingredients:

3 1/4 cups all purpose flour
1 1/2 tsp sugar
1 tsp salt
1/2 tsp baking soda
1/2 ounce fresh yeast
5/8 cup warm milk
5/8 cup plain yogurt
veggie oil for greasing
1/2 cup butter
2 Tbsp poppy seeds

Directions:

Sift the flour into a large bowl and stir in the sugar, salt, and baking soda. Dissolve the yeast in the milk and stir in the yogurt. Mix thoroughly with the flour to form a dough.

Knead the dough until it is smooth, and then place in a bowl covered with a clean cloth and leave it to rise in a warm place for about 4 hours.

Divide the risen dough into 12 equal sized portions and roll them into balls. On a lightly floured surface, flatten the balls into oblong shapes, using both hands and slapping the naan from one hand to the other.

Grease a griddle or heavy bottom skillet lightly with oil an dheat it until it is very hot. Cook the naan on one side only, a few at a time. Remove and spread the raw side with butter and poppy seeds. Cook under a preheated hot broiler until browned. Serve Hot.

When made with sesame seeds as Cheryl suggests, this recipe is nearly identical to one I have for Turkish pide bread.  Yogurt in the dough just makes bread wonderfully chewy. I don't think many restaurant naans incorporate yogurt because to me they lack texture. So I will definitely be trying this! Thank you.

Hot naans from the oven can be eaten on its own! We get them at shops that bake them in clay ovens called "tandoor". This can be eaten with any curry dish.  The alternate seasoning are sesame seeds (I love it), garlic, pepper. Also if butter is used instead of veg oil, it give it that rich flavor. I want one now  Cheryl

When Patrick and I make this together we sometimes substitute the poppy seeds with fresh pressed garlic.  I am sure you could subsitute it with a lot of diffrent things.  This is a wonderful bread.  Angel
