Total time:       2 hours, 45 mins.

 

Ingredients:

1 pkg. (18.25oz) white cake mix
2 egg whites
1 egg
1/4 cup oil
15 cream-filled chocolate sandwich cookies, such as Oreos, chopped, 2 cups
1-1/2 cups butter at room temperature
1 pkg. (11oz.) 60% cocoa bittersweet chocolate chips, melted, cooled
1-3/4 cups confectioners' sugar
1/4 cup dark corn syrup

 

Directions:

Preheat oven to 350 degrees. Coat 2 (8") round cake pans with cooking spray. On medium-high speed, beat cake mix, egg whites, egg, oil and 1-1/3 cups water until blended. Increase speed to medium-high; beat until light and fluffy, 2 minutes. Stir in chopped cookies. Divide batter between pans. Bake 25 minutes or until toothpick inserted into centers comes out clean. Cool 5 minutes in pans. Transfer from pans to racks; cool completely. Meanwhile, on medium speed, beat butter until smooth. Add chocolate chips; beat until blended. Gradually beat in confectioners' sugar. Add corn syrup; beat until fluffy 2 minutes. Place one cake layer on serving plate; spread with 1 cup frosting. Top with remaining layer. Spread top and side of cake with remaining frosting.

Everyone here loves cookies and cream.Would cookies and cream ice cream alongside be overdoing it?LOL

This sure does sound good.   I saw a recipe like this on the food channel,, they also added the crushed cookies in the frosting as well.  Boy am I hungry!!!!    Thanks for sharing.
