Source: Old Christmas ( cooking school )

 

Very sweet and good

 

Servings:         8 to 10

Prep time:       20 mins

Cook time:      2hours

Total time:       2hours and 20 mins

 

Ingredients:

6 c. Milk
1/2 c butter ( a Stick )
1/2 c yellow cornmeal
1/4 c flour
1 teaspoon salt
1/2 c moasses
3 Eggs beaten
1/3 c of surgar
1 teaspoon of cinnamon
1 teaspoon of nutmeg
1 c of golden raisins ( optional )
Whipped cream or Vanilla ice cream

 

Directions:

Scald the milk and butter in a larger double boiler. Or heart the milk and butter for 5 to 6 min on high in the mic untill it is boiled the put in a pot on stove keep hot.
Preheat oven to 250 F
In a separate bowl mix cornmeal flour salt stir in molasses thin the mixture with about 1/2 c of the milk a few tablespoons at a time gradually add the mixture back to the large pot of milk. cook stirring until thickened.
Temper the eggs by slowly adding a half cup of hot milk cornmeal mixture to beaten eggs wisking conantly add the egg mixture back to hot milk cornmeal, stir to combine. Stir in the sugar and spices untill smooth. At this point if mixture is clumpy you can run it through a blender to smoth itout. Pour into a 2 1/2 qurt shallow casserole dish. Bake for two hours
Allow the pudding to cool about an hour to be iys best. It should be reheated to worm temp if it has been chilled. Serve with whip cream or vanille ice cream

Is this American Indian ? I was served a pudding while dining on a Hopi Indian Mesa's - wondered if this was it? I will make it and see. . .but, wondering if our western or Eastern India pudding. . .  Great Idea for Thanksgiving. . .

    Q. Every Thanksgiving we would have a cauliflower and pimento cheese cassarole. I just love it but, somewhere the recipe got lost. Anybody ever had this and knows a good recipe?
