Source: my take on a local deli's recipe

 

a chunky salad with cheese, fruit and nuts

 

Servings:         8

 

Ingredients:

1 1/2 lbs. Boar's Head smoked chicken, cut into 1/2 inch pieces
1 lb. red grapes, washed and stemmed
4 oz. Danish blue cheese, crumbled
1/2 cup sliced almonds
1 cup mayonnaise
2 Tbsp. white vinegar
1 Tbsp. sugar

 

Directions:

Mix all the ingredients together, in a large mixing bowl, until well combined. Chill for several hours or overnight before serving.

Oh my! Thank you so much for reporting this recipe.  I dearly love Bleu Cheese and paired with the smoked chicken is shear heaven. I can hardley wait to make this.

Wow great combinations! I have to try this.  Bleu cheese a little much for me, though, but I LOVE gorgonzola, a little of the tang, but not overpowering.  This one is on my to try list!  Thanks!!

Nana, I think gruyere would be nice in it as it is a stronger tasting cheese than plain Swiss.  The deli's recipe used smoked turkey and walnuts but I prefer the texture of smoked chicken over the turkey and I was out of walnuts -- but we liked the almonds better, so it was providential.  This makes a great sandwich or is fine on it's own.  I like to have several salads in the fridge during the summer, so we can just sorta graze when we want something lighter.  pea

Nana 28, if you don't like Blue Cheese, try Feta or a Sharp Cheddar.  I think that it's important that you have a cheese that would be a nice counterpoint to the sweetness of the grapes.  The grapes would dominate if the cheese is too mild.

I am not a real Blue Cheese fan but I guess I could give it a try in this!  Does anyone have another cheese that might go well with this recipe instead of Blue cheese?  Maybe gryere (sp)?
