Delicious Sweet Chicken and Pineapple

 

Servings:         4-6 Servings

Prep time:       25 Minutes

Cook time:      15-20 Minutes

Total time:       50

 

Ingredients:

8 Chicken Breast cut in small chunks
1 20oz can pineapple chunks in own juice drained
1/2 cup pineapple juice from drained pineapple
1 cup ketchup
1/4 cup sugar
3 1/2 tablespoons soy sauce
4 tablespoons lemon juice
1 teaspoon lemon peel
2 tablespoons dry sherry, not cooking sherry
1/4 cup flour
1/3 cup oil

 

Directions:

Draine pineapple and reserve syrup
Combine syrup with ketchup, sugar, soy sauce, lemon juice, lemon peel and sherry in medium saucepan and simmer 10 minutes

flour chicken pieces and brown quickly in large skillet with oil. When chicken is golden brown about 10 minutes drain and transfer to casserole and toss with pineapple chunks.

You can make it ahead and stop now keeping sauce and casserole separate. When ready to eat
Heat oven to 375 Pour sauce over all and bake for 15-20 minutes until sauce is bubbling.

When ready to serve sprinkle with Seasame Seeds!

Tip: My family loves the sauce so I double the sauce.

Sounds wonderful. I am guessing cooking sherry is too sweet? I have that, no dry sherry but good excuse to get some :) Thanks!

Thank you for this.  I make a pork dish very similar. I just substitute cubed pork loin for chicken, and sweet & sour sauce from a bottle.  (sshhh) don't tell. It's our secret.   LOL
