This is the one dessert that I am asked to make for every holiday. It combines just the right blend of sugar and spices with a buttery, flaky crust.

 

Servings:         8

Prep time:       30 min.

Cook time:      60 min.

Total time:       90 min.

 

Ingredients:

Crust:
3 cups flour
1/2 teaspoon sugar
1/2 teaspoon salt
1 cup very cold REAL butter,cut in cubes
1/2 cup ice water

Pie filling:

1/2 cup sugar
4 Tbsp. flour
2 Tbsp. brown sugar
1 1/2 tsp. cinnamon
1 dash nutmeg
1 dash ginger
1 dash allspice
8 large Cortland apples
1 Tbsp. lemon juice
3 Tbsp. honey
1 large egg
1 tsp. water
4 Tbsp. REAL butter (cut in cubes)
2 Tbsp. half & half
1 tsp. sugar (extra)

 

Directions:

Prepare crust:
In a large mixing bowl, combine flour, sugar and salt. Working quickly, cut butter into dry mixture until resembles small pebbles. With a fork, stir in ice water one tablespoon at a time until mixture barely holds together. Shape into 2 flattened discs, wrap in plastic wrap tightly and refrigerate 1/2 hour.

Meanwhile, prepare filling:
Preheat oven to 400 degrees F. In a large bowl, combine 1/2 cup sugar, flour, brown sugar, cinnamon, nutmeg, ginger and allspice, and mix well. Peel and thinly slice apples. Sprinkle apples with lemon juice, then toss apples in the sugar and spice mixture, coating well. Drizzle the honey over the apples and toss to combine. Roll out the bottom crust for the pie and fit into pie plate. Mix the egg with the water and brush the inside of the crust with the mixture. Pour coated apples into bottom crust and dot with the 4 Tbsp. butter. Brush edges of the bottom crust with the egg and water mixture. Roll out top crust, place on pie and seal the edges. Cut vents or shapes in top crust and decorate with extra crust, cut into shapes, if desired. Chill for 15 minutes. Brush entire top of pie with the half & half, then sprinkle with the extra 1 tsp. of sugar. Bake at 400 degrees F for 10 minutes, then reduce oven temperature to 350 degrees F and bake for an additional 45-60 minutes or until crust is nicely browned and juices are bubbling. Enjoy!
