Crispy and delectably delicious!

 

Servings:         60 wontons

Prep time:       45 minutes

Cook time:      25 minutes

Total time:       1 hour 10 minutes

 

Ingredients:

Filling
1 lb. hot Italian Sausage
1 cup shredded Mozzarella cheese
1 tsp. fennel seed
1 tsp. sugar
1 tsp. Italian seasoning
1 1/2 tsp. bottled minced garlic
2 T pesto
1/4 cup Parmesan Reggiano, grated plus
1/4 cup Parmesan Reggiano grated for garnish
salt and pepper to taste
1 1/2 package wonton wrappers
1-2 quarts vegetable oil for frying

Sauce
1 T evoo
1 14.5 can diced tomatoes
1 14.5 oz.can tomato sauce
3 T tomato paste
2 tsp. bottled minced garlic
1 tsp. pizza flavored seasoning
handful fresh basil, finely chopped
salt and pepper to taste

 

Directions:

Heat oven to 200 degrees. Mix all filling ingredients for wonton filling except wrappers. Once blended, separate a few wonton skins and fill each with about 1 tsp. of mixture. Have a bowl of water ready. Fold wonton skin into a triangle, moistening edges with finger and water to help seal edges. Press firmly. Repeat with remaining filling and skins. Fill pan only about half way full with oil. Heat oil in wok or deep heavy kettle to 370 degrees. Use thermometer to prevent from getting too hot. Carefully deepfry wontons a few at a time for 2 or 3 minutes or until golden and crispy. Drain on paper towels, keeping warm in a pan in a 200 degree oven. Serve with hot marinara sauce. Sprinkle wontons with finely grated parmesan reggiano cheese.

Sauce:

Heat oil and add garlic, cooking a minute then add tomatoes, tomato sauce,tomato paste, garlic, pizza flavored seasoning and salt and pepper to taste. Simmer over low heat while you prepare wontons. Watch until it reaches the consistency you like. 20 minutes is a good amount of time for me. Then keep warm while you cook wontons. Just before serving add finely chopped fresh basil in a serving bowl on top of large platter. Surround with fried wontons.

 they sound fantastic and am thinking of making them but do you cook the sausage BEFORE you stuff the wontons?

I'm a HUGE fan of wonton skins, and use them to make all sorts of appetizers.  Try them stuffed with Thanksgiving leftovers - turkey, stuffing and cranberry, or mashed potatoes and turnip with brussel sprouts.  Amazing!!!

I have never used a wonton wrapper, (I know, where have I been) so I'm wild to try them.  With my luck, they won't stay together and then I'll have a nice deep-fried pot of sausage, cheese, and unstuck-wrapper thingies, lol.  These sound super-deelish, I shall have no fear of wonton wrappers!  ;o)  Thanks for a great post.
