Source: In my recipe folder (may have gotten on line not sure)

 

 

 

Ingredients:

1/4 cup olive oil
1 carrot peeled (and diced small)
1 Celery rib (diced small)
1 small onion (chopped small)
2 large cloves garlic minced
1 tsp dried oregano
1 tsp dried thyme
1 tsp dried basil
2 cup green or brown lentils (I use brown)
8 cups vegetable broth
salt and pepper to taste
2 cups of a small pasta cooked (such as orzo, ditalini, elbows or shells)(I prefer ditalini)
1/4 cup romano cheese (either grated or shredded)

******I sometimes add slices of sweet italian sausage (cooked) to this recipe also.

 

Directions:

In a large saucepan, heat olive oil and saute the carrot, celery, and onion. Cook for 3 to 5 minutes until soft.

Add garlic, seasonings and lentils,and if adding sausage, you can add that now also. Cook for 30 seconds then stir.

Add broth,salt and pepper. Cover and simmer for 30 minutes on low heat until lentils are tender.

Add the cooked pasta to lentils, stir to combine. Serve with grated cheese on top

Usually if I make the home made ones (from the dry beans) I will use the leftovers for this recipe but I have used the canned also.

Do you used canned beans or dry beans? This sounds delicious but I wanted to double-check before I make this. Sounds like the perfect meal to make on a dreary chilly day like today.

to up the proyein i break barilla plus angel hair pasta into 1/4 inch pieces and add to soup.  i also cook a 10 oz. box of either spinach, kale or collards and add that.  with 8 0z tomato sauce.   it, a complete lunch for us.

I'm the only one who eats these and am always trying to find new ways to prepare them. Thanks! This sounds yummy...I'm going to try it with the red ones just for color Nothing chases away the winter blues like good soup!

We love all kinds of beans here and my DH loves to cook them, he will just love this since he loves lentils especially. (Weird, I know!) Sounds great and healthy too and I love the idea of the sausage slices too. Thanks so much :)

I love lentils. G does not. He snarls and bares his teeth whenever I make them, but I still do because they are one of my favorite beans. I just fix him something else. Thank you for this one.
