Servings:         4

Prep time:       15 minutes

Total time:       30 minutes

 

Ingredients:

1 small onion, chopped fine
1 small carrot, chopped fine
2 cloves garlic, chopped fine
3 tbsps. fat free chicken broth
4 tbsps. chopped fresh basil or 2 tbsps, dried basil
2 tbsps. fresh Italian parsley, chopped
1 28 ounce can tomatoes, Italian style, diced in their own juices

 

Directions:

Saute onion, carrot and garlic in chicken stock for 5 minutes. Add tomatoes, basil and parsley. Cook for about 10 minutes to heat and blend flavors. Serve immediately over cooked pasta.
