Creamy and spicy soup

 

Servings:         6

Cook time:      30

Total time:       45

 

Ingredients:

1/2 stick butter or margerine
2 Tbls olive oil
2 cups chopped yellow onion
1 cup chopped carrots
1 cup chopped celery
2 Tbls chopped garlic
6 Tbls all purpose flour
1/2 cup mild salsa
2 cans (4 1/2 oz) chopped green chiles
2 tsps ground cumin
2 tsps crushed red pepper
4 cups chicken broth
2 cups fresh or canned tomatoes
2 cans (8 oz) whole kernel corn drained
4 cups diced cooked chicken
4 cups heavy whipping cream (can use half and half)
1/2 cup chopped cilantro
2 cups shredded Jack or Cheddar cheese

 

Directions:

Combine butter and olive oil in large saucepan over medium heat. Add onion, carrots, clery and garlic and saute 4 minutes stirring often. Add flour and stir well 2 minutes. Add salsa, green chiles, cumin and red pepper. Stir until thick paste develops. Add chicken broth, tomatoes and corn stirring well. Bring to boil then reduce to simmer and add chicken. Cook 10 minutes. Warm cream in microwave then add to soup along with cilantro. Add cheese and stir until melted. Serve

This sounds good.  We were at the Bistro last week and she was making a Green Chili Pork Soup for the daily special she made a couple of pizzas out of the marinated pork .   They were delicious.   They gave Lou and me a piece .  I can't wait to try this chicken soup.    I am going to send it to Lou too.   ThLove your wonderful recipes. TH anks for sharing all yur wonderful tasty recipes.   it, Alice.
