Ingredients:

4 TBSP CRISCO PURE VEGETABLE OIL

2 MEDIUM ONIONS CHOPPED

1/2 POUND COOKED HAM [ DICED]

1 CARROT PEELED AND FINELY CHOPPED

2 CLOVES GARLIC [ MINCED]

1 POUND COLLARD GREENS FINELY CHOPPED [ STEM AND RIBS REMOVED]

1 [ 14 OZ ] CAN CHICKEN BROTH

5 CUPS WATER

1 BAY LEAF

1/2 TSP CRUSH RED PEPPER FLAKES

2 [ 16OZ] CANS BALCK-EYED PEAS

SALT AND PEPPPER

2 TBSP VINEGAR

 

Directions:

HEAT OIL IN A LARGE SAUCEPAN OVER MEDIUM HEAT

ADD ONOIN,HAM,CARROT,AND GARLIC COOK; STIRRING OCCASIONALLY UNTIL ONIONS ARE TENDER

ADD COLLARD GREENS,BROTH,WATER,BAY LEAF AND CRUSHED RED PEPPER FLAKES TO SAUCEPAN

SIMMER UNTIL GREENS ARE TENDER ABOUT 25 MIN

RINSE AND DRAIN BLACK-EYED PEAS

MASH 1 CAN OF PEA IN MEDIUM BOWL STIR MASHED AND WHOLE PEAS TO SOUP

SIMMER 5 MIN SEASON TO TASTE WITH SALT AND PEPPER STIR IN VINEGAR

My husband always wants black eyed peas on New Years. Ha. This recipe sounds wonderful but I always have Chinese on New Years. It's my good luck food. My mom went into labor with me while eating Chinese food, on New Year's Eve. I came into the world the next morning.

At last a new way to eat black eyed peas New Years!  I have been eating them sooooo long I'm afraid not to!  What better, with a pan of cheesy jalepino corm bread.

I agree with Nana-we grew up with the premise that if you ate blackeyed peas and pork on New Years that you would have good luck all year! Thanks for the different spin!!
