Ingredients:

One flank steak, about 1 1/2 pounds
2 teaspoons grated zest and 1/2 cup juice from two oranges
1/4 cup packed dark Brown sugar
2 tablespoons rice vinegar
2 tablespoons soy sauce
2 teaspoons chili garlic sauce
2 teaspoons grated fresh ginger
2 teaspoons cornstarch
4 teaspoons vegetable oil

 

Directions:

Cut flank steak lengthwise into three long strips, then cut each strip crosswise into thin slices. Whisk orange zest, orange juice, sugar, vinegar, soy sauce, chili garlic sauce, ginger, and cornstarch in medium bowl. Heat 2 teaspoons oil in large skillet over medium-high heat until just smoking. Cook half of steak slices until browned, about one minute per side. Transfer to bowl and repeat with remaining oil in steak. Add orange mixture to skillet. Cook over medium heat, scraping up any Browned bits, until thickened, 2 to 3 minutes. Stir in beef to coat with sauce. Sprinkle with scallions. Serve.
Serves four

I'm diabetic too.  Type 2.  Only carbs and sugars affect blood sugar to a large degree.  Anything that's protein has very little affect on blood sugar.  If there's fat it takes longer for carbs to digest, thus increasing the lengeth of time your sugar is up.    Wendy

This sounds great. I don't understand why Jackee's husband can't have beef. I'm diabetic and I KNOW chicken or beef do not interfere with blood sugar. Unless he has a cholesterol problem, there is no difference. Only carbs/sugars affect us, not proteins. But I bet it's great with either! Thanks:)

COULD YOU SUBSTITUTE THE BEEF FOR CHICKEN. I WOULD LIKE TOO TRY THIS FOR MY HUSBAND BUT HE'S AN DIABETIC.

Great idea. Never thought of round steak. I thought of flat iron, or skirt steak, but they may be hard to find. Thanks, sweetie.

I have used round steak or london broil in place of this too in other recipes, that should suffice here also!
