Sobu noodles with chicken, fresh veggies, cilantro and sesame

 

Servings:         4

Prep time:       20

Cook time:      9

Total time:       29 minutes

 

Ingredients:

2 cups rotisserie chicken
1 8.8 oz. package Udon noodles
1/2 red bell pepper julienned
1/2 white. or red onion, julienned
1 pkg. frozen edamame, thawed and shelled
1 pkg. bean sprouts, rinsed in cold water
1 carrot, thinly diagonally sliced
1/2 cup green onions, thinly sliced
Sauce
3 T soy sauce
2 T hoisin sauce
2 T rice wine vinegar
1 T honey
1 T toasted sesame oil
1 tsp. chili paste
1 tsp. bottled minced garlic
1 tsp. minced ginger

handful coarsely chopped cilantro
1 tsp. toasted sesame seeds

 

Directions:

Cook noodles according to pkg. directions or about 9 minutes. Meanwhile cut vegetables and place in large shallow bowl. Mix sauce ingredients and set aside.

Drain noodles when cooked and add to veggies. Add sauce and toss. Sprinkle with cilantro and sesame seeds. Serve immediately.

I absolutely love this dish!!! A couple of the chinese restaurants serve it and I have it when I can get down the mountain for a day!! Now I can make my own!! Thank you sweetie!!

Linda, can I please come over the next time you make this so I can just eat it, lol!  I am actually learning so much from your posts ~ ingredients that I just have never cooked with before are now appearing on my shopping list.  And I find myself Googling ingredients from your recipes too, just so I have a little bit of knowledge before I shop.  So thanks ever, I am loving it all!!
