After having attempted eggplant parmesan in the past, I was inspired to make a an easy bake when I noticed these breaded eggplant slices at the store

 

Cook time:      35 minutes

 

Ingredients:

2 lbs breaded eggplant slices
approx 38oz tomato and basil spaghetti/pasta sauce
approx 6 cups shredded mozzarella cheese

 

Directions:

Preheat oven to 375 degrees.

Spread a thin layer of sauce in the bottom of a 9x13 baking dish. Place half the eggplant slices in a single layer on top of the sauce. Spread another thin layer of sauce over the slices. Add a little less than half of the cheese over the sauce. Place the remaining eggplant slices in a single layer on top of the cheese. Spread remaining sauce over the eggplant slices, making sure to also spread some down into the sides of the dish. Add remaining cheese on top.

Bake for 35 minutes. Allow to cool for 10-15 minutes before serving.


Notes:
* The eggplant brand I found in our grocer's freezer is Dominex. I was thrilled to find them as I greatly dislike the prep work required when using eggplant in recipes.
* I end up using about 2-1/2 jars (15.25oz each) of sauce for each batch.

Certainly is easy, especially for cleanup! I have never seen pre-sliced eggplant, will have to look around. Thanks for sharing a new idea!

These particular slices are lightly breaded, but I'm not sure if they are already peeled or not.   ~smile~

And, I figure that there *must* be other brands out there.  This is the only one that I've found locally - and that was only recently that I noticed them.  I have to wonder how long the store has been carrying them.  ~lol~

Now that I have the one bake with the slices, I'll be starting to think of other ways to use the slices.

Thanks so much for an easier way to make Eggplant Parmaggiana.  I have always loved it but resisted making it because, like you, it seemed like too much trouble.  will look for this product in my area.

Are the slices peeled?   I know this is good,  because I really like eggplant.  I think eggplant is one of the easiest things to cook.  Fried, sauteed, chopped into pasta sauce, grilled,etc

I trim and thickly slice mine (not peeled), spray with olive oil, then add garlic and Italian type spice (no pepper). Add romano and Mozarrella cheese on top, then bake.
